staging/color-management: remove references to H.273
References to H.273 are confusing people: https://gitlab.freedesktop.org/wayland/wayland-protocols/-/merge_requests/442#note_3079717 The confusion arises from H.273 usually referring to encoding standards which only indirectly define a reference display.
